Extra tender leg of lamb from the finest lamb meat, refined with techniques passed down through generations. Slightly milder in taste than the smoked version.
The leg is dry- and brine-salted and then naturally matured for at least four months under daily supervision. Wind, weather and a well-trained eye determine when the meat is ready.
